Leek Frittata with Grana Padano & Prosciutto di San Daniele

Ingredients
3 medium leeks
4 eggs
100 g Prosciutto di San Daniele (2/3 cup)
50 g Grana Padano (3/8 cup)
200 ml milk (7 fluid oz)
salt and pepper
extra virgin olive oil
Preparation
STEP 1
Cut the leeks remove the thicker leaves, chop them with a knife and wash them well under the tap. Cook the leeks in a pan with 2 tbsp of olive oil; add salt and pepper and cook until soft. In a bowl whip the eggs with a fork, add salt and pepper, the milk and whisk a little more.
STEP 2
Cut the Prosciutto di San Daniele into strips and add it to the bowl with the eggs with the grated Grana Padano. Finally add the leeks and mix well. Pour the mixture onto a well greased round baking tin. Bake at 180C or 350F for 25 minutes or until golden.
