Wash the potatoes well and slice them finely without peeling. Place the slices on a baking tray covered with paper towels so that they dry well.

Heat the frying oil in a large pan. When the oil has reached temperature, fry the potato slices until golden brown. Drain them with a slotted spoon and place them on a sheet of paper towels.
STEP 3
Season the chips while still warm with salt, pepper, fresh thyme and finely grated Grana Padano cheese, stirring well. Serve the chips when warm.
