    Orange-flavoured turkey chunks with baby potato salad, celery and Grana Padano PDO 9 to 16 months

    For this delicately flavoured main course, we chose Grana Padano PDO with the youngest seasoning to maintain a delicate taste that does not overpower the rest of the flavours, while at the same time giving the right savouriness to the accompanying salad.

    Ingredients

    • 300 g turkey breast
    • 1 orange (juice)
    • 00 flour
    • 1 tablespoon soy sauce
    • 300 g boiled new potatoes
    • 2 celery stalks
    • 25 g Grana Padano DOP 9-16 months (whole piece)
    • Oil
    • Salt
    • Pepper

    Preparation

    STEP 1

    Cut the turkey rump into bite-sized pieces then dip them in flour so that they are completely covered with it and sieve them so that there is no excess residue. This step will serve to thicken the sauce in which the chunks will be cooked.
    In a frying pan, heat a little oil and brown the morsels over a high flame so that a nice outer crust is created.

    STEP 2

    Wet the morsels with the orange juice and soy sauce and cook for about 7-8 minutes over low heat, adjusting the salt and pepper.

    STEP 3

    In the meantime, cut the previously boiled and cooled new potatoes into wedges.
    Cut the celery into small pieces, possibly leaving a few leaves to give the salad a more lively flavour.

    STEP 4

    Cut Grana Padano PDO 9-16 months into small cubes and combine all the salad ingredients in a bowl, seasoning with oil, salt and pepper.
    Serve the turkey bites with their sauce and accompanying salad.
