Potato Gateau with Grana Padano Riserva, Ham and Peas

Ingredients
500 g potatoes
150 g Grana Padano Riserva
150 g diced ham
150 g fresh peas
2 eggs
1 tablespoon breadcrumbs
Extra virgin olive oil
Salt and pepper to taste
Preparation
STEP 1
Peel the potatoes and boil in plenty of salted water until soft. Drain the potatoes and mash while still warm using a potato ricer, then transfer to a large bowl. Add the eggs, grated Grana Padano, ham, peas and a drizzle of olive oil and mix well, seasoning with salt and pepper to taste.
STEP 2
Grease a baking tin with olive oil, dust with breadcrumbs and grated Grana Padano and pour in the mashed potato mixture, levelling it with a wet spoon.
STEP 3
Bake in a preheated oven at 180 °C for 30-35 minutes. Let the gateau cool for 5-10 minutes before serving.
