    Cod Burger, Spinach and Grana Padano in Soft Sesame Seed Buns

    Ingredients

    • 400 g cod fillet
    • 250 g fresh spinach
    • 50 g Grana Padano
    • 50 g breadcrumbs
    • 1 lemon
    • Parsley
    • 4 soft sesame seed buns
    • 100 g beetroot (cooked)
    • 1 garlic clove
    • Sweet mustard
    • Mixed salad leaves
    • Extra virgin olive oil
    • Salt & pepper

    Preparation

     

    STEP 1

    Sauté the spinach in a non-stick pan with a drizzle of olive oil and a clove of garlic.

    STEP 2

    In a blender, combine the cooked spinach, pieces of cod, grated Grana Padano, breadcrumbs, lemon peel, and a sprig of parsley. Blitz until you obtain a soft and compact mixture.

    STEP 3

    Shape 4 burgers with the help of a pastry-cutter and cook for 3-4 minutes on each side in a non-stick pan with a drizzle of olive oil.

    STEP 4

    Allow to cool briefly and serve the burgers with soft sesame seed buns, mustard, salad, and sliced beetroot.
