    Baked sardines stuffed with breadcrumbs, parsley and Grana Padano

    Ingredients

    • 40 g fresh sardines, cleaned and pressed open
    • 80 g Grana Padano
    • 100 g breadcrumbs
    • 1 lemon
    • Extra virgin olive oil
    • Vegetable oil for frying
    • Flour
    • Parsley
    • Salt & pepper

    Preparation

    STEP 1

    In a bowl, combine the breadcrumbs with the finely grated Grana Padano, add the chopped parsley, a pinch of salt, the lemon zest and mix well. Add the lemon juice, a drizzle of olive oil and combine all the ingredients well. 

    STEP 2

    Place 20 sardines on the work surface skin down. Put a teaspoon of Grana Padano and breadcrumbs mixture on each one and cover with 20 more sardines, skin up. Press well with your hands. Flour the stuffed fish and fry them in plenty of moderately hot vegetable oil until golden. 

    STEP 3

    Serve warm with salt, pepper, and lemon juice.
