    Baked avocado stuffed with egg, salmon and Grana Padano

    Ingredients

    • 2 avocados
    • 100 g Grana Padano
    • 200 g smoked salmon
    • 200 g baby spinach
    • 4 eggs
    • 1 bunch chives
    • Extra virgin olive oil
    • Salt& & pepper

    Preparation

    STEP 1

    Halve the avocados and remove the stone with a knife. Scoop a bit of flesh out of the centre of each avocado to create a well. Put the avocado halves on a baking tray lined with parchment paper and crack an egg into each well.

    STEP 2

    Sprinkle the Grana Padano on top, season with a pinch of salt and pepper, and drizzle with of olive oil. Bake in a preheated oven at 180 °C for 10-15 minutes.

    STEP 3

    Serve the warm avocados garnished with Grana Padano shavings and chopped chives, accompanied by smoked salmon and fresh baby spinach.
