    Spring Salad with Green Beans, Chicory, Croutons and Grana Padano

    Ingredients

    • 400 g green beans,
    • 200 g Grana Padano,
    • 4 slices sandwich bread,
    • 4 bunches chicory,
    • extra virgin olive oil,
    • chives,
    • balsamic vinegar,
    • salt & pepper.

      Preparation

      STEP 1

      Steam the green beans for 10 minutes and set aside to cool.
      Cut the bread into cubes and toast in a pan with a drizzle of olive oil.

       

      STEP 2

      Assemble the salad in a bowl with the chicory, green beans, croutons, chopped chives, shavings of Grana Padano, salt and pepper.

       

      STEP 3

      Serve the salad with a drizzle of extra virgin olive oil and a few drops of balsamic vinegar.
