Lentil salad with pumpkin, red onion, olives, Grana Padano and parsley

Ingredients
300 g lentils (precooked)
150 g Grana Padano
1 red onion
30 g Taggiasca olives
300 g pumpkin
parsley
extra virgin olive oil
salt
pepper
Preparation
STEP 1
Clean and dice the onion and the pumpkin.
STEP 2
First sweat the onion in a pan with a tablespoon of extra virgin olive oil, then add the pumpkin. Cook on medium heat until soft. Season with salt and pepper.
STEP 3
Transfer the lentils in a bowl, add the vegetables, olives, Grana Padano shavings, and the chopped parsley. Mix well and add salt if needed.
