Chickpea Salad with Grana Padano

Ingredients
- 300 g precooked chickpeas,
- 100 g Grana Padano shavings,
- 1 head lamb’s lettuce,
- 4 large red onions,
- 150 g water,
- 50 ml vinegar,
- 3 tablespoons cane sugar,
- extra virgin olive oil,
- salt & pepper.
Preparation
Thinly slice the onions and brown in a non-stick pan with a drizzle of extra virgin olive oil.
Mix water, vinegar and cane sugar in a bowl and pour into the pan with the onions, continuing to cook them on low for 10-15 minutes.
