    How to make savoury cornetti (dough)

    To make savoury-filled croissants, the first step is to prepare the puff pastry. This is also the most tricky step but if you follow our instructions you won’t go wrong.

    STEP 1

    Dissolve the yeast in water at room temperature, sieve the two types of flour, add the sugar and put all ingredients in a stand mixer.

    STEP 2

    Add a drizzle of oil and stop the stand mixer once the ingredients in the dough are evenly combined.

    STEP 3

    Leave to rise for two hours. Take the butter at room temperature and roll it with a rolling pin until you obtain a square half a centimetre thick.

    STEP 4

    When the dough has finished rising, roll it out making sure you obtain a larger square than the butter. Place the square of butter in the centre of the square of pastry, close it at the extremities and leave it to rest in the fridge for 15 minutes.

    STEP 5

    Roll out the pastry again into a rectangular shape and fold it three times; leave it to rest in the fridge for 30 minutes. Repeat this step two more times, then allow to rest in the fridge for about two hours.

    STEP 6

    Roll out the pastry again into a rectangular shape and cut it into triangles. Shape the pastry into croissants, put them on a baking tray and leave to rise for one hour and a half.

    STEP 7

    Brush with egg yolk and bake in a fan oven at 200° C for 30 minutes. Leave to cool down and get started on the filling.
