Friselle with Grana Padano, pears, almonds and honey

Ingredients
2 wholemeal friselle
1 pear
50 g Grana Padano PDO, flakes
20 g almonds, coarsely chopped
1 teaspoon honey (you can use acacia or millefiori honey)
Fresh mint leaves to taste
A drizzle of extra virgin olive oil (optional)
Preparation
STEP 1
If the friselle are not already crispy, soak them lightly under running water or dip them briefly in a bowl with a little water so that they become soft but not too soft. If you prefer a crispier texture, you can lightly toast them in the oven.
STEP 2
Wash and peel the pear, then cut it into thin slices. If you want to prevent the pear from oxidising, you can spray it with a little lemon juice.
STEP 3
Spread the pear slices evenly over the friselle. Add the Grana Padano PDO flakes on top of the fruit. Sprinkle chopped almonds over the pears and cheese for a crunchy touch. Sprinkle a teaspoon of honey on top of each friselle to add a sweet contrast.
STEP 4
Garnish with fresh mint leaves and, if desired, add a drizzle of extra virgin olive oil for an extra touch of freshness.
