Ad Crispy and crunchy these are not far off from a really good chip!
They are rich in flavour owing to finely chopped sage and a generous dose of grated Grana Padano added to the polenta before it is fried. The Grana Padano adds a rich, salty almost nuttiness to the polenta which takes just five minutes to cook. Then you let it set and shallow fry it (which I promise is very easy work!). Cut them however you wish (triangles are also popular) but I love to cut them into long chip like pieces and to cover them in a shower of more freshly grated Grana Padano.
They are SO good just as they are but if you like, you can whip up a quick mayo or aioli too.
