    Tartare of Seasonal Vegetables and Grana Padano

    Ingredients

    • 100 g Grana Padano,
    • 3 carrots,
    • 3 courgettes,
    • 1 yellow pepper,
    • 1 tablespoon pine nuts,
    • 1 bunch curly parsley,
    • 1 bunch basil,
    • 1 lemon,
    • extra virgin olive oil,
    • salt,
    • pepper.

    Preparation

    STEP 1

    Dice the vegetables and transfer to a bowl. Add the lemon juice, chopped parsley, salt, pepper, grated Grana Padano and olive oil and mix well.

     

    STEP 2

    Set aside to rest in the refrigerator for at least 30 minutes and serve with fresh basil leaves.
