Frittata stars with seasonal vegetables, Grana Padano Riserva and diced ham

Ingredients
6 eggs
100 g Grana Padano Riserva
100 g diced cooked ham
200 g fresh peas
1 red pepper
1 yellow pepper
1 leek, sliced
1 bunch chives
1 bunch basil
extra virgin olive oil
salt
pepper
Preparation
STEP 1
Fry the leek in a non-stick pan with a drizzle of extra virgin olive oil. Add the diced peppers, peas and diced ham and cook over medium heat for a few minutes.
STEP 2
In a mixing bowl, beat the eggs and add the chopped chives, a drizzle of extra virgin olive oil and grated Grana Padano Riserva, and season with salt and pepper to taste.
STEP 3
Remove the vegetables from the heat, transfer them to the bowl with the beaten eggs and mix well.
STEP 4
Heat a non-stick pan with a drizzle of extra virgin olive oil and cook the frittata over medium heat on both sides, until golden.
STEP 5
When cooked, cut the frittata into stars using a star-shaped cookie cutter. Serve the frittata stars cold with basil leaves and shavings of Grana Padano Riserva.
