    Carrot, green bean and basil patties with Grana Padano

    Ingredients

    • 200 g potatoes
    • 150 g carrots
    • 100 g Grana Padano
    • 150 g green beans
    • 50 g breadcrumbs
    • 1 spring onion
    • 2 eggs
    • extra virgin olive oil
    • parsley
    • basil
    • basil sauce
    • salt

    Preparation

     

    STEP 1

    Boil the potatoes in their skins in salted water for 30-40 minutes, then drain and peel while still warm. Mash the potatoes with the potato masher and place in a bowl. Dice the carrots and green beans and slice the spring onion.

    STEP 2

    Lightly fry the sliced spring onion in a non-stick pan with a drizzle of olive oil, add the vegetables with around half a glass of water, season and cook for 5-10 minutes, Put the still crunchy vegetables into the bowl with the potatoes, add the eggs, the finely grated Grana Padano and the chopped parsley, mixing well until the mixture can be shaped by hand. Shape round patties and turn them in the breadcrumbs.

    STEP 3

    Arrange the patties on a baking tray lined with parchment paper, skewer with a wet wooden lolly stick, then drizzle with olive oil. Bake in a preheated oven at 180 °C for 20-25 minutes, turning regularly until evenly cooked and golden brown.

    STEP 4

    Serve the patties while still warm, with tomato sauce and fresh basil leaves.
