Bread and herbs croquettes with Grana Padano spicy sauce

Ingredients
500 g stale bread
50 g Grana Padano
2 eggs
250 ml milk
breadcrumbs
1 sprig of parsley
Salt
Pepper
Oil for frying
For the spicy sauce:
230 g Grana Padano
280 g fresh cream
1 tsp chili pepper
Preparation
STEP 1
Cut the bread and put it in a bowl. Pour the milk over it and leave it to soften. Use a fork to break down the bread, add one egg, the chopped parsley and the grated Grana Padano. Add salt and pepper and mix well.
STEP 2
Take a spoonful of mixture and make a ball. Squash the ball slightly and roll it in the beaten egg, then in the breadcrumbs. Repeat until you finish the bread mix. Fry the croquettes in plenty of boiling oil until golden. Add salt to taste.
STEP 3
To make the spicy sauce, in a small saucepan heat the fresh cream and the chili pepper on medium heat and add the grated Grana Padano. Mix well and remove from the heat. Serve the bread croquettes with the spicy Grana Padano sauce.
